Mixed Summer Fruit Jam
This is a variation on blackcurrant and raspberry jam for a mixture of summer fruits, invented when I had a variety of fruit but not enough of any one kind to be worth making a pot of jam.
Use whatever mixture of fruit available, blackcurrants, raspberries, loganberries or any other raspberry/bramble hybrids.
If using blackcurrants, weigh these separately and simmer them with water in the same proportions as for blackcurrant jam, i.e. one pint of water to each pound of blackcurrants, ½ pint for ½ lb fruit, etc.
As you don't want any fruit to dominate the taste it is best to keep the weights approximately equal. The exception to this is blackcurrants which have a strong flavour and I suggest ½ lb of blackcurrants to 2 lbs of other fruits as for blackcurrant and raspberry jam. This gives a good balanced mix but I have used fruit in various proportions and the result has always been acceptable.
If not using blackcurrants, you can weigh the fruits together and follow the instructions for raspberry jam.
