Gooseberry Jam

3 lb | gooseberries | 1 pint | water |
4 lb | granulated sugar |
Method
Use a good cooking variety such as "Careless" or "Leveller".
Wash the gooseberries and top and tail them. Place the gooseberries in a pan with the water and simmer gently till well broken down before adding the sugar and proceeding as usual.
Try to catch it as soon as it has reached setting point so that the jam is pale green. Unfortunately, I've never quite managed to do this. Even if you can catch it just at setting point by the time you have tested it, it will have darkened already. Frustrating!
This jam keeps well but tends to darken and get a little stiff over time.
