Plum & Apple Jam

3 lb | plums without stones | 1 lb | peeled, cored and chopped cooking apples |
3½ lb | granulated sugar | ½ pint | water |
Method
Select firm just ripe plums. Slice the fruit roughly and place in a bowl. Sprinkle with a little of the sugar and leave for a few hours or overnight to make its own juice.
Transfer to a saucepan, add the chopped apple and water.
Simmer till the fruit is tender.
Add the remaining sugar and proceed as usual.
Because of the difficulties getting plum-only jam to set I use apples to make this easier. It also adds bulk if you don't have access to lots of plums. I find that increasing the proportion of apples to plums tends to make the jam less tasty but not unacceptable if you don't have enough plums.
Unfortunately the apples do not overcome the tendency for mould to grow on the top so is best used relatively quickly.
